Eating gluten and dairy free eliminates most of my usual breakfast foods. In an effort to find something filling to eat in the morning other than fruit I came across a recipe in Cooking with Coconut Flour for coconut honey muffins. These muffins are simple to make and are a hit with the Husband and little ones.
Coconut Honey Muffins
adapted from Cooking with Coconut Flour
makes 12 muffins
4 Tbsp. coconut oil, melted
6 Tbsp. honey
1/4 cup coconut milk
1/2 tsp. vanilla
1/2 tsp. salt
6 eggs
1/2 cup coconut flour
1/2 tsp. baking powder
Preheat oven to 400F (205C). Add the coconut oil, honey, vanilla, salt and eggs to a bowl and whisk until well blended. Add coconut flour and baking powder and whisk until smooth. Divided into 12 muffin cups and bake for 15 minutes.
This is great!
ReplyDeleteI've found that when I feed my kids breakfasts like this it will be hours - hours!- before they are begging me for something to eat. Yesterday it was 6 hours before I heard, "I'm hungry"!
Now, please don't think that I'm starving my kids. :-) On the contrary. They are eating healthy high density foods and they are more happy - as am I.
Thanks for sharing this recipe. I might also make a note that some coconut and almond flours are not defatted (they aren't here) so people may not need to use oil in some cases. (I had a couple of oily disasters in my oven before I learned this.)
