Winter Weekly Meal Plan #4

I am so glad it's Friday. The weather was monotone this week, slightly below zero and cloudy. My one glimpse of sunshine happened late this afternoon. Weather really affects my mood so these cloudy days are driving me crazy. I'm hoping for more sun this coming week or we're all going on an adventure up the mountains to spend some cloud free time.


We have a busy weekend ahead of us which will be a good distraction from the clouds. We're having supper with friends on Saturday and my son convinced us to throw an impromptu birthday party for him this Sunday. I have a few exciting posts for next week. Until then, I hope you have a great weekend.

Saturday
lunch: leftovers.
dinner: Dinner out. I'll be bringing dessert: Honey lime coconut panna cotta.

Sunday
lunch: Birthday Party: Pulled pork sandwiches and coleslaw.
dinner: Leftovers.

Monday
lunch: Hard boiled eggs, cheese, raw veggies and fruits.
dinner: White bean and vegetable soup.

Tuesday
lunch: Leftover soup.
dinner: Vegetable curry.

Wednesday
lunch: Leftover curry.
dinner: Homemade tacos with ground beef, cheese, salsa and lettuce.

Thursday
lunch: Homemade macaroni and cheese.
dinner: Lentil burgers.

Friday
lunch: Sourdough grilled cheese sandwiches.
dinner: Split pea soup.
