End of Fall Weekly Menu

This is the last week (and a bit) of Fall. Winter is about to begin, at least officially. I know some people have been dealing with snow piles and freezing temperatures for a while already, while others are basking in summer weather. Yesterday we had our second snow fall. It looks pretty outside and we're excited to go explore the cross country ski area soon.

Sunday
to do: soak chickpeas
lunch: Homemade tomato soup and sourdough grilled cheese.
dinner: Ginger beef stir fry with rice.

Monday
lunchBroccoli cheese tart with potato crust.
dinnerCurried lentil soup.

Tuesday
lunch: Leftover tart and Waldorf salad (replacing grapes for raisins and mayo for plain yogurt)
dinner: Beef meatball bourguignon with smashed potatoes.

Wednesday
to do: feed sourdough
lunch: leftovers.
dinner: Whole roasted chicken, roasted root vegetables and winter squash.

Thursday
to do: defrost beans
lunch: Hard boiled eggs, cheese and veggies.
dinner: Shredded chicken and pinto beans in homemade tacos (using leftover chicken).

Friday
to do: make sourdough bread
lunch: Chicken soup (using leftover chicken).
dinner: Dinner out with friends. Bring a salad.

Saturday
lunch: Out Skiing! Raw fruits, veggies, cheese and homemade crackers.
dinner: German pancake.

To make this week:
Still haven't made my beef broth... so here's hoping I get it done this week.

  1. Yum, all sounds so good! I love having a weekly menu, we definitely eat better when we do! I love your adding the "to do" part. Will have to keep that in mind......

  2. Will try the brocoli& chesse tart this week...sounds so yummy! ..and it gives me an excuse to use the potatoes we harvested from our garden!!
